I know it's not jewellery related but it is vegan, the perfect amount and tastes amazing.
I've been making mug cakes a bunch this last week (I know, sugar addicted 😬) and all of them have mostly sucked. Until today when I decided to do my own recipe. This is perfect for when you can't be arsed to make a whole cake or a whole mess and need that emergency treat whilst not having to get out of your pyjamas.
You're welcome, mates.
Without further ado...
Ingredients:
3 tbs all purpose flour
1 tbs cocoa
3 tbs cane sugar
1/8th tsp baking soda
1 tbs tasteless oil (I used grapeseed)
1/2 tsp vanilla extract
3 tbs almond milk
Ganache:
1 tbs vegan chocolate (maybe 3 three squares?)
1 tbs vegan butter (just less than a tbs)
a couple pinches of sugar
Method:
Carefully mix all the dry ingredients together in a mug, make a well and add the oil, extract and milk, whisk with a fork and make sure you get those corners!
Chuck in the microwave for 1 minute and 15 seconds.
Whilst that is happening, put your ganache ingredients in a little ramekin or something similar. Remove your cake and microwave the ganache for 1 minute or until the butter is nicely melted and hot enough to melt the chocolate. Whip it together and pour over your mug cake! I put my cake in the freezer for 3 minutes just to try and cool it down as I fin it tastes better when not piping hot.
Voila! An emergency cake.
